Serves 4
 
4 whole fillets breaded and cooked fish such as red snapper
 
Chimichurri Sauce
1 cup parsley leaves
¼ cup fresh oregano leaves, or 3 tsp dried
¼ cup cilantro leaves
1 hot pepper such as jalapeno
½ cup or more olive oil
2 cloves garlic, mashed
1 tbsp finely chopped red onion
1 tbsp lemon juice
2 tbsp red wine or sherry vinegar
 
By Hand: Finely chop the parsley leaves, oregano and cilantro leaves. Finely chop the hot pepper. Transfer to a bowl. Add the olive oil, mashed garlic, red onion, lemon and vinegar. Stir, adding more olive oil, if necessary. Sauce should be quite wet. Season with salt and pepper.
 
In a Food Processor: Combine all ingredients and pulse until mixture is finely chopped. Add additional olive oil as required to create a smooth saucy consistency. Season with salt and pepper.
 
Serve the sauce with the cooked fish, chicken or grilled beef.
