Grilled Apple Turkey Panini

Paninis are a delicious way to elevate just about any sandwich. Play with different breads like sourdough, ciabatta or French baguette. Experiment with different fillings and spreads. If you don’t have a Panini press, use a fry pan set over medium heat, turning the sandwich over once the bottom side is brown.

 

Serves 2

 

2 tbsp (30 mL) mayonnaise
1 tsp (5 mL) Dijon mustard
1 tsp (5 mL) prepared horseradish


2 ciabatta buns
4 slices Black forest or smoked turkey deli meat
4 slices prosciutto
¼ cup (60 mL) thinly sliced pickled hot peppers
4 slices Havarti cheese
4 slices smoked cheese, such as Applewood
1 cup (250 mL) fresh arugula leaves

 

Preheat a Panini press according to the manufacturers instructions.

Meanwhile, in a small bowl whisk together the mayonnaise, Dijon mustard and horseradish.

Slice open the buns lengthwise. Spread the inside of each half with some of the mayonnaise-mustard mixture. Top one side with sliced turkey, prosciutto, some pickled hot peppers, the cheese, and arugula leaves. Top with the second half of the bread. Grill according to manufacturers instructions, usually about 7 minutes, until the inside is warm and the cheese is starting to melt. Serve immediately.
