Ingredients:

  • 1 lb Brussels sprouts
  • ½ cup of maple syrup
  • 1 tbsp butter
  • Olive oil
  • Roasted Pine Nuts
  • Maldon Salt – (can use regular sea salt)
  • Cracked pepper

Directions:

1. Peel all wilted leaves off the sprouts and wash the sprouts thoroughly. Cut the stem at the base of the sprout, being careful to cut low enough that no leaves fall off. Slit the sprout in half from the top down, and cut out a triangle at the base of the heart to get rid of the woody bit.

2. Soak the halves in cold water so water gets between all the layers of leaves. Then place the sprouts in a large bowl and toss with generous amounts of olive oil, salt, and pepper.

3. Oil the pan and place the sprouts face down. Cook at 400 degrees for 8-10 minutes, until the sprouts are soft. Then place the oven on broil and carmelize the tops of the sprouts.

4. In a small pot, simmer the maple syrup and stir in the butter. When the sprouts are carmelized, remove from the pan and place in a bowl. Toss in the maple butter sauce, and stir. Season to taste with sea salt and cracked pepper. Place in a serving dish and garnish with roasted pine nuts (To roast, place on dry pan and broil on hi for 3-5 mins).
